Anthony O’Connell, the New Director of Culinary & Services @ The Papandayan


Bandung – January 25, 2013. The Papandayan is proud to welcome the new Director of Culinary and Services, Mr. Anthony O’Connell. He is originally from Australia and discovered his love for cooking at a very young age. He bring with him more than 20 years’ of culinary experience and management skills, coupled with award-winning menu preparation background.

Anthony’s career started at an early age at Wellingtons Restaurant as apprentice cook, a small but highly regarded and award winning fine dining restaurant in Perth, Western Australia.  Since then his career has constantly progressed with major international Hotels like Hilton, Hyatt and Rosewood, until now, being appointed as the new the Director of Culinary and Services at The Papandayan Hotel. From catering to world leaders at Australia's Parliamentary Catering Services with Hyatt International and the luxurious Al Faisaliah and Al Khozama Hotels in Riyadh, Saudi Arabia; toAlila Jakarta and most recently at The Hotel Grand Sahid Jaya in Jakarta.

Mr. Anthony O’Connell is familiar with a wide assortment of cuisines and stemming from a direct exposure to both Western and Asian cooking styles. With almost a decade’s experience in Indonesia Anthony has an excellent first-hand knowledge of the Heritage Cuisine of Indonesia. Anthony is looking forward with great anticipation in expressing his passion through his menus and service. He feels very privileged to be doing what he loves and believes great food is an integral part of a balanced life.

Along with the arrival of Mr. Anthony O’Connell at The Papandayan and to commemorate Australia Day in this January,The Papandayan will have the Australian favorite Lamington. Likely, named after a 19th-century governor of Queensland, Lord Lamington. The Lamington is a luscious individual sponge cake coated first in a layer of traditionally chocolate icing and then rolled in desiccated coconut. Lamingtons are sometimes served as two halves with a layer of cream and strawberry jam, but in The Deli, we give a special layer of raspberry jam. Lamingtons became more widely known outside of Australia.
